Surströmming (sour herring) is a national dish of Sweden that's basically just fermented herring. It's usually consumed in northern Sweden in August and September and used to be a common means of preserving surplus fish from a good catch. Said not to taste that bad as long as you don't breathe through your nose. Whether describing it as preserved when allowed to rot is technically accurate is debatable but the fact is that it's consumed by humans without inflicting lasting damage.

The only description of its preparation I can find is as follows:

Ingredients:

• 35-40kg (80-90 lbs) stromming (herring)
• A large amount of coarse salt
• One 60 liter (16 gallon) barrel with ventilation valve
• One salinometer

Preparation:

Create a brine with a salinity of 23 degrees. One way to get the right brine concentration is to make holes in the bottom of a bucket, fill it with the coarse grained salt, and filter the water through the salt.

Gut the fish and remove the heads.

Day 1.

Fill one third of the 60 l barrel with the 23 degree brine. Put in the fish, add salt on the top. Let it stand for a few hours. Then stir every third hour for the rest of the day.

Day 2.

The brine should be much less salty, about 11 degrees, because much of the dissolved salt will have been absorbed by the fish. Keep 5l of the brine, they call it the blood brine. Sieve the fish and throw away the remaining brine. Make another 20l of 12 degree brine. Fill the plastic barrel to one third with brine; these 20l should include the 5l blood brine, and add the fish. Put on the lid. Keep it at 17 to 18°C (63-65°F). You must use the ventilator to prevent it from exploding becasue of gaese released during the fermentation. It will be ready in mid August. It will stink.

Surströmming is not for the faint-hearted, Swedes included. One way of eating it is wrapped in thin slices of local bread (tünnbrod). Fillet the fish and roll it up in the bread along with raw onion and boiled potato. Potato of course is not part of the traditional recipe. A generous amount of vodka or aquavit is recommended, as an accompaniment if not for dutch courage before eating. Some people drink beer or milk with it.

If canned, opening the tin is usually done underwater since the fermentation causes a buildup of gases that results in a squirt of smelly stuff when the tin is punctured.

I haven't been there but I hear that the city of Örnsköldsvik has a museum dedicated to surströmming, opened in 2001 (the museum, that is, not the barrel of rotting fish). They've built it at a safe distance from the town. Stockholm, on the other hand, forbids opening tins of the stuff in apartment buildings since not all Swedes are fond of it and neighbours are likely to protest when the smell spreads through the hallways.

Eaten only by certain Swedes living north of Gävle (180 km north of Stockholm), surströmming is a delicacy, a cult, a terror, a feat of endurance. It seems everyone has heard of lutefisk, but not as many know of surströmming (at least in America). This is strange to me, because the worst thing about lutefisk is the preparation, but the taste is fairly mellow. On the other hand, surströmming, literally "sour herring," is unbelievably offensive. The Lapplanders (the only people who eat it) hold contests--who can eat the most of these scrumptious fish in one sitting. Someone who can eat 20 or 30 of the 3-5 inch-long fish is doing well, until they eat them and become sick. Surströmming is to Sweden what haggis is to Scotland, what durian is to Thailand. Surströmming is to fish "what limburger is to cheese and what pornography is to literature."

What is surströmming? Raw herring, straight from the northern part of the Baltic sea, dropped raw into cans of water. The can is sealed and left to "ripen" for several months, preferably in the sun. The fish is not ready until the can is bulging due to the chemical process which takes place, namely fermenting.

It is my personal opinion that surströmming stinks worse than durian melon. Really. The fish smells so bad you can smell it through the sealed metal can. Some grocery stores seal the cans in ziplock bags to contain the odor. The Swedes all say everyone on the block, in the neighborhood, knows when someone opens a can of surströmming.

I can't quite understand why anyone ate the dang stuff in the first place. The most frequent story I've heard is during a war or famine or something, there were barrels of herring which had accidently been left in barrels on the deck in the sun. The people were very hungry--they must have been desperate--so they tried to eat the fish, and some of them grew to like it. Another explanation is that fermenting is cheaper than preserving it in brine, but I somehow doubt a product like surströmming was an intentional dish.

Surströmming is traditionally eaten with potatoes, onions and Swedish bread, washed down liberally with: 1-beer and aquavit, or 2-beer and vodka, or 3-milk. If you wrap the fish and potatoes in the bread and eat, it helps to mellow the flavor of the fish.

Hjalmar and I had heard all about this "surströmming" before going to Sweden, and Hjalmar, intrepid gourmand, decided he wanted to "prova" (try) some. We were in Gävle, which is about as far south as anyone will eat the stuff, and our hosts at first thought we were joking. "You really want to try it?" at this point, their faces lit up with a mixture of national pride, surprise, and the expectation of a good show or joke. "Are you sure?" Hjalmar answered in the affirmative, so they took us down to the grocery store and bought a red and yellow can of surströmming.

When they opened the can, a terrible, terrible, indescribable smell came forth--the smell of something horribly, horribly rotten and fermented. When I caught my first whiff, I backed up quickly, out of the kitchen. Hjalmar had more courage (or something) and stayed closer to watch the fish being rinsed. Rinsing all of the rotten water down the drain helped with the stench, because then all we had left was rotten fish. Our kind host prepared the fish for us (i.e. removed the head and middle guts and bones), and had boiled potatoes for us to eat it with. I heard afterward that we should have had the bread, too, but we didn't know at the time.

Hjalmar tried it first, a rotten piece of stinking fish on potato. He chewed thoughtfully and kind of gulped it down. My family, who saw this on video afterwards, said he was very polite and trying to not make a face, although he will probably disagree with that because he said it wasn't that bad. Misery loves company, so of course he insisted that I try some too. The piece they gave me had bones in it, so I was trying to get them out but mostly just ended up with very sticky fingers that smelled terribly for the rest of the day. I bit down and was greeted by the strangest, most indescribable taste I've ever experienced. It was sour, salty, rotten, fishy, and something else. I think we described it as "almost good." It wasn't so bad eating it; the rotten taste mostly showed up as a really bad taste left in your mouth after. For first-timers, I highly highly recommend you have something nearby to drink-anything. It was edible; neither of us gagged, but I wasn't really eager to eat any more. The worst thing about it was the lingering after-taste (which comes to haunt you for several hours after eating). I've been told it grows on you and you can really start to like it. Personally I think it's just some kind of perverted pride in being able to eat the stuff without making a face.

Our host said that it was much better fresh, although how one has "fresh" fermented fish is beyond me. It was a very interesting experience, and I would recommend it to anyone in Sweden who has the chance. You'll never have anything remotely like it anywhere else.

臭い食べ物のランキングをかかげた。順位はアラバスターという器械で測ったAuという臭さ単位の順である（食べ物でないが、履いた靴下で120Au、野球部の練習後のストッキングで420Auという記録もある）。 　第１位は、開缶直後のシュール・ストレンミング、第２位はホンオ・フェ（韓国のエイ料理）で6千～8千Auとなっており、第３位のエピキュアーチーズ（缶詰チーズ）の1870Auを大きく上回っている。 　以下11位までの臭い（が美味い）食べ物に関して、下表で解説を加えることとする。 臭い食べ物の解説 シュール・ストレンミング スウェーデンの魚（ニシン）の缶詰。発酵して缶が膨張し爆発寸前状態にある。開缶にあたっての４つの注意事項が缶詰に書かれているという。①家の中では開缶しない、②開缶するときは必ず何か不用なものを身にまとう、③開缶する前に必ず冷凍庫に入れてガス圧を下げておく、④風下に人がいないかどうかを確かめてから開缶。残念ながら日本では缶の爆発の危険性と食品衛生法上から輸入が禁止されている。 ホンオ・フェ 韓国の食べ物で魚のエイを発酵させたもの。5ミリぐらいにスライスして、醤油、コチュジャン、ニンニク、ネギの入ったタレにつけ、ゆでた豚の３枚肉とサンチュに包んで食べる。とても高価で、韓国では主として結婚式の時に出されるが、強烈なアンモニアのために食べるとぼろぼろ涙が出てくるという。 エピキュアーチーズ ニュージーランドの缶詰チーズで熟成を缶の中で行うため乳酸菌発酵に伴う炭酸ガスや硫化水素などにより缶詰は膨満し破裂しそうな形状を呈する。味は酸味が強くがコクがあり、においはどんなチーズより強烈ですごみを帯びているという。 キビヤック カナディアン・イヌイットたちの食べ物。アザラシのお腹の中に海燕の一種であるアパリアスを60～70羽ぐらいを詰め込み、土の中で3年ほど発酵させた食べ物。アザラシの脂肪とともに発酵した海鳥肉の体液を食す。ビタミン豊富で煮た肉や焼いた肉にこれをつけて食べる。 くさや サメの頭、魚の内臓や血液などを海水に入れて発酵させた「くさや液」に、ムロアジなど魚の開きを2時間ぐらいつけてから天日で干すという操作を繰り返して仕上げる魚の干し物。くさや液は先祖代々繰り返し連続使用しているという。 鮒鮓 近江産が名高い鮒でつくったなれ鮓（すし）。なれ鮓は魚や鳥獣肉に塩をして、米飯のようなデンプン質とともに保存して、乳酸発酵をさせて作った発酵食品であり、発酵した米飯部分は捨てて魚肉部分だけ食べていた（にぎり寿司はネタをなれ鮓が淡水魚中心だったのを海産魚に変え、酢飯とともに食べれるようにした即席食品）。 納豆 仏教伝来以来肉食への傾斜は小さくなった日本人は、味噌、醤油、豆腐とならんで、納豆を貴重な蛋白源とした。醤油の匂いと合い、漬け物や味噌、くさや、熟鮓とも共通する匂いを有する。「朝霜や室（むろ）の揚屋（あげや）の納豆汁」蕪村（室=港町の名称、揚屋=安い遊郭） 沢庵 大根の糠漬け。大根には他の野菜より多くの含硫化合物（メチオニン、システインなどの含硫アミノ酸やチオシアネートなどの硫化物）を含まれ、糠漬けの発酵過程で微生物の分解を受け揮発性硫黄化合物となって飛散するため、強烈な臭みとなる。 臭豆腐 チートウフウ。植物の汁と石灰等を混合し、納豆菌と酪酸菌によって発酵させた漬け汁に豆腐を一晩程度つけ込んだ食べ物。 ニョクマム ベトナムの魚醤。東南アジアには、他に、タイのナム・プラー、ラオスのナム・パー、カンボジアのマム、ブラ・ホック、ミャンマーのガビ・ガゥンといった魚醤がある。 （資料）小泉武夫「発酵は力なり―食と人類の知恵 (NHK人間講座 (2002年6月~7月期))、同「くさいはうまい」文春文庫（2006年）、柳田友道「うま味の誕生―発酵食品物語」岩波新書（1991年） （2007年6月18日収録）

Scraping OG Objects We’re already hard at work improving the Open Graph since last week’s announcement. This week, to make updating Open Graph objects easier, we’ve released the ability to scrape objects at the same time as you publish actions. Just add scrape=true to the POST parameters when publishing the action: https://graph.facebook.com/me/recipebox:cook? scrape=true& method=POST& recipe=http://www.example.com/pumpkinpie.html& access_token=YOUR_ACCESS_TOKEN Note that you only need to scrape an object if the meta tags have changed. If we ever encounter an URL that we've never scraped, we will scrape it regardless of the absence (or presence) of the scrape parameter. We also automatically scrape objects approximately every seven days, though we will respect Expires: headers. See the Open Graph documentation on Creating and Using Actions for the full details. Reminder: Breaking Changes coming on Oct 1st The following breaking changes are slated to go into effect on the 1st of October: OAuth 2.0 Migration All apps must migrate to OAuth 2.0 for authentication. The old SDKs, including the old JavaScript SDK (FeatureLoader.js) and old iOS SDK (facebook-iphone-sdk) will no longer work. Apps on Facebook authentication and security migration All Canvas and Page tab apps must convert to process signed_request (fb_sig will be removed) and obtain an SSL certificate for use in Secure Canvas URL and Secure Page Tab URL (unless you are in Sandbox mode). Auth 1.0 deprecation Auth.promotesession, auth.createtoken, auth.expiresession, auth.getsession will be removed on Oct 1st. Details on support for OAuth 2.0. manage_pages permission required to access user accounts (/me/accounts) We are modifying access to the FQL page_admin table and the graph.facebook.com/me/accounts endpoint. Previously, with basic permissions granted, an app could go to this endpoint or the FQL table to access the list of a users’ apps and Pages. We are going to require that apps have the manage_pages permission in order to obtain access to this information. We will post an update on the rollout plan on Monday, Oct 3rd (the changes themselves will proceed as planned). Canvas Ticker Flyouts Last week, we launched flyouts for the Canvas ticker. These flyouts appear when a user hovers over or clicks on a ticker story. They provide richer information to users about what's going on with their friends, and often allow users to like and comment on the story. For games, we have also launched “passing stories” in the Canvas ticker. These are stories in which gamers are informed when one friend gets a new high score which exceeds another friend's high score. This is most appropriate for arcade-style games where you get a score each time you play. To have these stories appear for your app, make sure to use the scores method in the Graph API each time your user gets a new high score. One important side effect of this change, for apps using Adobe Flash, is that it is more important than ever that your app use "opaque" mode for any flash objects occurring within the iframe. If you don't, your game will be hidden when a popup occurs. Please see Special Considerations For Flash Developers for more information. Support for Multiple Domains in the Developer App We have heard from developers that only being able to set one App Domain in the Developer App is sometimes not enough. For example, if you are redirecting users for geographic distribution of load, you may want to redirect some users to a URL in the myapp.com domain, while redirecting others to a URL in the myapp.co.jp domain. Now, you can do this in the Developer App. Simply set multiple domains in the App Domain field: Now, you can specify a redirect_uri in either domain. Your App’s URL (Website and/or Mobile Web URL) must be derived from one of the domains listed in the App Domain field. Coupled with the Open Graph updates announced at f8 last week, Requests continue to be a core part of how people share app activity with friends. As part of the FBML deprecation, we will stop supporting our old request model and will no longer fix bugs on January 1, 2012. We highly encourage all developers to move to Requests 2.0 by this date. Today we're announcing several new features to Requests 2.0 to make the process of sending and receiving requests even more efficient for users and developers. New features for Requests 2.0 We have heard repeated feedback from developers and users that requiring users to click ‘Send Request’ every time they wish to send requests to the same friends interferes with game play and limits sharing. To reduce this friction, we’re introducing frictionless Requests, which improves the experience for both users and developers. Frictionless Requests enable users to send requests to specific friends from within an app without having to click on a pop-up confirmation dialog. Upon first sending a request to a friend from within an app, a user may authorize the app to send subsequent requests to the same friend without prompting for his permission. By default, the check box is checked. This removes a dialog from the flow and streamlines the process of sharing with friends. To enable frictionless Requests you must initialize the JavaScript SDK with ‘frictionlessRequests:true’. You’ll send requests to users via the Requests Dialog just as before. As users share with friends, they may authorize the app to send future requests to specific friends on their behalf. You can specify an array of user_ids in the ‘to’ field of the request dialog. Only if all of the user_ids are frictionless, the confirmation dialog will not display and the users will be notified of the request. If even one of the recipients is not frictionless, the confirmation dialog will be displayed and the user must press ‘Send Request’ for the requests to be sent. However in doing so, we ran into issues which require a breaking change to Requests 2.0 to make them more efficient. To opt-into higher performance Requests 2.0 enable the migration “Requests 2.0 Efficient” in the developer app. This setting is available in the Advanced section of your app settings. Setting the ‘Request 2.0 Efficient” in the app migration changes the format for request IDs in the JavaScript requests callback method. Previously the response param that looked like: { request_ids: ‘request_id1, request_id2, …’ } With the “Requests 2.0 Efficient” migration, the JavaScript request callback method now receives a response param like below to represent the changes to the request ids explained above: { request: ‘request_id’ to:[array of user_ids] } A request now has a single ID representing the actual request object and is then concatenated with the user_id to create the full request ID which represents the request for the specific recipient. This prevents a developer from having to make a second GET request back to the Graph API to identify the recipients once a request has been sent. To construct the request ID for a user you concatenate as follows: ‘<request_object_id>_<user_id>’. Thus the request IDs from the example above would be: 150785095008591_499802820 180646335344553_499802852 To delete a request, the developer must issue an HTTP DELETE request to: DELETE https://graph.facebook.com/[<request_id>_<user_id>]?access_token=[USER or APP ACCESS TOKEN] Note: You can concatenate the request_id and user_id without doing the migration so that you can verify everything works before actually migrating. This requires developers to use the new request_id format as detailed above. In addition when a user is directed to your app, by clicking a Request from the app, the games dashboard, or from a Request notification, you must delete the request after it has been accepted. These are not automatically deleted once they have been clicked, thus it is the developer’s responsibility to clear them once they have been consumed. See sample above for how you can delete these requests. In 90 days - on January 1, 2012- existing apps will be opted into “Requests 2.0 Efficient” and "Upgrade to Requests 2.0" migrations and all developers must ensure that they are using the correct request_id format and deleting requests appropriately. Moving to a Modern Platform Thursday, September 29 at 7:00pm Published by Douglas Purdy When Platform launched in 2007, FBML was a key component for developers building on Facebook, with millions of apps successfully built using this technology. Over time, as Platform matured and embraced open standards, such as OAuth 2.0, HTML, and Javascript, the need for FBML has decreased. Last August, we announced our intent to move away from FBML. In March, we removed the ability to create new FBML apps. Today, we are announcing the FBML deprecation schedule:   January 1, 2012: FBML will no longer be supported. We will not fix FBML bugs after this date with the exception of security and privacy issues June 1, 2012: FBML apps will no longer work on Facebook. All FBML endpoints will be removed. We realize that some of you may still be relying on FBML for your apps. We want to make sure that you have all the resources you need for an easy and speedy migration. Over the past few months, we’ve been working with developers to understand the remaining use cases for FBML. Based on these conversations, we identified two primary use cases remaining: Requests and Static FBML tabs on Pages. Requests We have already announced the new and improved Request 2.0 which should make migrating from FBML Request much simpler. To upgrade to Requests 2.0, apps should send requests by using the Request Dialog. To learn more about Requests 2.0 and how to migrate from FBML Requests, see our documentation on Requests. Static FBML Custom tabs on Pages are an important aspect of Facebook Platform. Many developers and Page admins rely on Static FBML for hosting this content. With the deprecation of FBML, this content must be moved to an iFrame based solution. There are several free iFrame solutions available that allow easy migrate Static FBML content to HTML. The Preferred Developer Consultant Finder on Facebook is a great tool to find PDCs to help guide you through the upgrade process. In addition, we have worked with WildFire, one of these PDCs, to create a step by step tutorial to guide your migration. The tutorial is available here. We are excited to move into a modern, standards based Platform. Please provide feedback and thoughts in the comments below. Please Note: Our deprecation of FBML does not impact XFBML (eXtended Facebook Markup Language). XFBML is a set of XML elements that can be included in your HTML pages to display Social Plugins. When your page is loaded, any XFBML elements found in the document are processed by the JavaScript SDK, resulting in the appropriate plugin being rendered on your page. The JavaScript SDK will continue to support XFBML after the deprecation of FBML (save for the fb:serverFbml element which is used to execute FBML on our servers). Meeting the Oct. 1 HTTPS Deadline: Updating Secure URLs via API Thursday, September 29 at 12:15pm Published by Matthew Johnston Many of you have received an email reminder to support OAuth 2.0 and HTTPS by October 1st. To help Canvas and Page Tab App developers more easily update their Secure URLs, we have pushed changes to admin.setAppProperties that let you set your secure_callback_url and secure_page_tab_url programmatically. You can read the documentation for this API method here. You will need to use an app access token and the secure_callback_url and secure_page_tab_url must be a fully qualified URL beginning with https:// and must point to a directory (i.e., end with a '/') or a dynamic page (i.e., have a '?' somewhere). FBML apps We have heard that there is some confusion about whether FBML apps must support HTTPS. FBML developers still need to know whether users are browsing Facebook over a secure connection since they need to detect whether to serve iframe or video content over HTTPS. As a result, FBML apps must obtain SSL certificates in order to serve this type of content to users browsing over a secure connection. If you have an FBML app, please obtain an SSL certificate for your app to receive traffic from users browsing Facebook over a secure connection. If you enable SSL for your FBML app, please make sure that your SSL certificate includes all intermediate certificates in the chain of trust as our SSL validation is strict. You can use third-party SSL analysis tools (e.g., https://www.ssllabs.com/index.html) to check your certificate status and fix any errors (and warnings). If your SSL certificate has problems, you may see "Empty response received" error when you load your FBML canvas app. Please let us know if you have any questions in the comments below.
